Texas Caviar recipe

Texas Caviar is a refreshing and vibrant black-eyed pea salad that combines bold flavors of fresh vegetables and tangy dressing, perfect as a dip or side dish.

  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. In a large bowl, combine black-eyed peas, cherry tomatoes, red and green bell peppers, red onion, jalapeño, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, sugar, salt, and black pepper until well combined.
  3. Pour the dressing over the vegetable and pea mixture and toss gently to coat all ingredients evenly.
  4. Cover the bowl and refrigerate for at least 1 hour to allow the flavors to meld.
  5. Serve chilled or at room temperature with tortilla chips or as a side salad.

Notes

For a smoky twist, try adding a teaspoon of smoked paprika or chopped cooked bacon before serving.
