  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 (14.5 oz) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup butter, salted
  • 1/4 cup tomato paste
  • 2 tbsp garam masala
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1/2 tsp cayenne pepper (optional)
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread, for serving

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 6-8 minutes. Remove chicken from skillet and set aside.
  2. In the same skillet, melt butter. Add onion and cook until softened, about 5 minutes. Add garlic and ginger and cook for 1 minute more, until fragrant.
  3. Stir in diced tomatoes, tomato paste, garam masala, cumin, turmeric, and cayenne pepper (if using). Bring to a simmer and cook for 10 minutes, stirring occasionally.
  4. Pour in heavy cream and stir well. Reduce heat to low and simmer for 5 minutes, allowing the sauce to thicken slightly.
  5. Return the cooked chicken to the skillet. Stir to coat the chicken with the sauce. Season with salt and pepper to taste.
  6. Simmer for an additional 5 minutes, or until the chicken is heated through.
  7. Garnish with fresh cilantro and serve hot over cooked rice or with naan bread.

Notes

For an even richer flavor, add a tablespoon of honey or brown sugar to the sauce. Serve with a side of steamed vegetables for a complete meal.
