Tomato Garlic Pasta is a simple and flavorful Italian-inspired dish featuring fresh tomatoes and aromatic garlic, perfect for a quick weeknight meal.

  • 8 oz spaghetti pasta
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 cups cherry tomatoes, halved
  • 1/4 tsp red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh basil leaves, chopped
  • Parmesan cheese, grated (optional)

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.
  4. Add the halved cherry tomatoes and cook for 5-7 minutes until they soften and begin to break down.
  5. Season with salt, black pepper, and red pepper flakes if using.
  6. Toss the cooked spaghetti into the skillet, mixing well to coat the pasta with the tomato and garlic sauce.
  7. Remove from heat and stir in chopped fresh basil.
  8. Serve immediately, topped with grated Parmesan if desired.

Notes

For extra flavor, add a splash of white wine when cooking the tomatoes or garnish with toasted pine nuts for added texture.
