  • 1 pound Italian sausage, removed from casings
  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 8 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt, or more to taste
  • 1/4 teaspoon black pepper, or more to taste
  • 9 ounces cheese tortellini, fresh or frozen
  • 1 cup fresh spinach, roughly chopped
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. In a large pot or Dutch oven, brown the Italian sausage over medium-high heat, breaking it up with a spoon. Drain off any excess grease.
  2. Add the olive oil, onion, carrots, and celery to the pot. Cook until the vegetables are softened, about 5-7 minutes.
  3. Stir in the garlic and cook for another minute until fragrant.
  4. Pour in the chicken broth and diced tomatoes. Add the Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Add the tortellini to the soup and cook according to package directions, usually about 3-5 minutes, or until tender.
  6. Stir in the spinach and cook until wilted, about 1-2 minutes.
  7. Serve hot, garnished with grated Parmesan cheese, if desired.

For an extra layer of flavor, try adding a splash of heavy cream or a dollop of pesto to each bowl before serving.
