Turkey Cranberry Quesadillas

These Turkey Cranberry Quesadillas combine tender turkey, tangy cranberry sauce, and melted cheese for a deliciously festive and easy-to-make meal perfect for any occasion.

  • 4 large flour tortillas
  • 2 cups cooked turkey, shredded or diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup cranberry sauce
  • 1/4 cup green onions, sliced
  • 2 tablespoons butter
  • Optional: sour cream or guacamole for serving

Instructions

  1. Heat a large skillet over medium heat and add 1/2 tablespoon of butter.
  2. Place one tortilla in the skillet and sprinkle 1/2 cup shredded cheddar cheese evenly over it.
  3. Layer 1/2 cup cooked turkey and 2 tablespoons cranberry sauce over the cheese.
  4. Sprinkle with green onions and top with another 1/2 cup of cheese.
  5. Place a second tortilla on top and press gently with a spatula.
  6. Cook for 3-4 minutes until the bottom tortilla is golden brown and the cheese begins to melt.
  7. Carefully flip the quesadilla and cook for another 3-4 minutes until the other side is golden and cheese is fully melted.
  8. Remove from the skillet, let cool for a minute, then slice into wedges.
  9. Repeat steps 2-8 for the remaining tortillas and filling.
  10. Serve warm with sour cream or guacamole if desired.

Notes

For an extra crunchy quesadilla, brush the tortillas lightly with olive oil before cooking, or add a handful of chopped nuts like pecans for texture.
