Turkey Medallions with Orange Teriyaki Sauce

  • 1 lb turkey medallions
  • 1/2 cup orange juice
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 2 cloves garlic, minced
  • 1 tsp grated fresh ginger
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1 tbsp vegetable oil
  • 1 tsp sesame seeds (optional)
  • 2 green onions, sliced (optional)

Instructions

  1. In a small bowl, whisk together orange juice, soy sauce, honey, rice vinegar, garlic, and ginger to create the orange teriyaki sauce.
  2. Heat vegetable oil in a large skillet over medium-high heat.
  3. Add turkey medallions and cook for 3-4 minutes per side until golden brown and cooked through. Remove from skillet and set aside.
  4. Reduce heat to medium and pour the orange teriyaki sauce into the skillet.
  5. In a separate small bowl, mix cornstarch and water to form a slurry, then add it to the sauce in the skillet.
  6. Stir constantly until the sauce thickens, about 2-3 minutes.
  7. Return turkey medallions to the skillet, spooning the sauce over them to coat well. Cook for an additional 1-2 minutes to warm through.
  8. Garnish with sesame seeds and sliced green onions if desired. Serve immediately.

For a complete meal, serve with steamed rice and a side of sautéed vegetables or a fresh green salad.
