  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon black pepper
  • 6 cups chicken broth
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 cup cooked rice or quinoa
  • 1/4 cup chopped fresh cilantro or parsley
  • Salt to taste
  • Lemon wedges, for serving (optional)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion, carrots, and celery and cook until softened, about 5-7 minutes.
  2. Add garlic, ginger, turmeric, and black pepper and cook for 1 minute more, until fragrant.
  3. Pour in chicken broth and bring to a simmer.
  4. Add chicken and simmer until cooked through, about 10-12 minutes.
  5. Stir in cooked rice or quinoa and heat through.
  6. Season with salt to taste.
  7. Garnish with fresh cilantro or parsley.
  8. Serve hot with lemon wedges, if desired.
