  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon ground turmeric
  • 4 cups chicken broth
  • 2 cups cooked chicken breast, shredded
  • 1 cup egg noodles
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • Salt and pepper, to taste
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, grated ginger, and ground turmeric. Cook for another 1-2 minutes until fragrant.
  3. Pour in chicken broth and bring to a boil.
  4. Add sliced carrots and celery, simmer for 10 minutes until vegetables are tender.
  5. Stir in shredded chicken and egg noodles. Cook until noodles are tender, about 7 minutes.
  6. Season with salt and pepper to taste.
  7. Remove from heat and stir in fresh lemon juice and chopped parsley.
  8. Serve hot and enjoy your nourishing soup!
