  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup freeze-dried strawberries, crushed into powder
  • 2 tablespoons strawberry jam (optional, for filling)
  • Pink or red sanding sugar, for decorating

Instructions

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, salt, and freeze-dried strawberry powder.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Add the egg and vanilla extract to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  6. Roll out the dough to about ¼ inch thickness on a lightly floured surface.
  7. Cut out heart shapes with a cookie cutter and place them on the prepared baking sheet.
  8. Sprinkle the tops with sanding sugar for a festive look.
  9. Bake for 10-12 minutes or until edges are just golden.
  10. Allow cookies to cool completely on a wire rack.
  11. Optional: Sandwich two cookies with a teaspoon of strawberry jam for a sweet filling.
