Vegan Avocado Tofu Sushi Roll Delight

Enjoy a healthy and delicious Vegan Avocado Tofu Sushi Roll! This simple recipe combines creamy avocado, savory tofu, and perfectly seasoned sushi rice for a satisfying plant-based meal.

Ingredients

  • 1 cup sushi rice
  • 1 cup water
  • 2 tbsp rice vinegar
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 1 block firm tofu, pressed and sliced into strips
  • 1 avocado, sliced
  • 4 sheets nori seaweed
  • Soy sauce, for serving
  • Wasabi, for serving (optional)
  • Pickled ginger, for serving (optional)
  • Sesame seeds, for garnish (optional)

Instructions

  1. Rinse the sushi rice in a fine-mesh sieve until the water runs clear.
  2. Combine the rice and water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until all the water is absorbed.
  3. Remove from heat and let stand, covered, for 10 minutes.
  4. In a small bowl, whisk together the rice vinegar, sugar, and salt until the sugar is dissolved.
  5. Gently fold the vinegar mixture into the cooked rice.
  6. Place a sheet of nori on a bamboo rolling mat.
  7. Spread a thin layer of rice evenly over the nori, leaving about 1 inch of space at the top edge.
  8. Arrange tofu and avocado strips across the rice near the bottom edge of the nori.
  9. Using the bamboo mat, roll the sushi tightly from the bottom up. Moisten the top edge of the nori with water to seal the roll.
  10. Repeat with the remaining ingredients.
  11. Slice each roll into 6-8 pieces with a sharp, wet knife.
  12. Serve with soy sauce, wasabi, and pickled ginger, if desired. Garnish with sesame seeds if desired.

Notes

For extra flavor, marinate the tofu in soy sauce and ginger before adding it to the sushi roll.
