This Vegetarian Quinoa Salad Bowl is packed with protein, fiber, and vibrant flavors. It’s a healthy and satisfying meal perfect for lunch or dinner.

Ingredients

  • 1 cup quinoa, rinsed
  • 2 cups vegetable broth
  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 cup chopped cucumber
  • 1 cup chopped bell pepper (any color)
  • 1/2 cup chopped red onion
  • 1/2 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 3 tablespoons lemon juice
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is cooked and liquid is absorbed. Fluff with a fork.
  2. In a large bowl, combine cooked quinoa, chickpeas, cucumber, bell pepper, red onion, feta cheese (if using), and parsley.
  3. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper.
  4. Pour dressing over the salad and toss to combine.
  5. Serve immediately or chill for later.

Notes

Add grilled halloumi or avocado for extra flavor and healthy fats. You can also substitute any vegetables based on your preference.
