Delicious Veggie Wrap

These vibrant veggie wraps are packed with fresh vegetables and a flavorful hummus spread, making them a healthy and delicious lunch or snack. Customize them with your favorite veggies for a satisfying and easy meal.

Ingredients

  • 4 large tortillas (whole wheat or gluten-free)
  • 1/2 cup hummus
  • 1/2 cup shredded carrots
  • 1/2 cup chopped cucumber
  • 1/2 cup bell pepper, thinly sliced (any color)
  • 1/4 cup spinach or mixed greens
  • 1/4 cup sprouts (optional)
  • 1/4 avocado, sliced (optional)

Instructions

  1. Spread 2 tablespoons of hummus evenly over each tortilla.
  2. Layer the carrots, cucumber, bell pepper, spinach/greens, and sprouts (if using) over the hummus.
  3. Add avocado slices (if using).
  4. Tightly roll up each tortilla, tucking in the ends as you go.
  5. Cut each wrap in half before serving.

Notes

For extra flavor, add a sprinkle of everything bagel seasoning or a drizzle of your favorite vinaigrette. You can also grill the wraps for a warm and toasty variation.
