A Warm Bowl of White Lasagna Soup

This White Lasagna Soup is a creamy, comforting twist on classic lasagna, made in one pot! Loaded with ricotta, mozzarella, and plenty of savory flavor, it’s the perfect easy weeknight meal.

  • 1 tablespoon olive oil
  • 1 pound Italian sausage, removed from casings
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 (15 ounce) can cannellini beans, rinsed and drained
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces lasagna noodles, broken into small pieces
  • 1 cup heavy cream
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley, for garnish
  • 1 cup shredded mozzarella cheese, for garnish

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add onion and garlic to the pot and cook until softened, about 5 minutes.
  3. Pour in chicken broth, cannellini beans, oregano, salt, and pepper. Bring to a boil.
  4. Add lasagna noodles and cook until tender, about 8-10 minutes.
  5. Stir in heavy cream, ricotta cheese, and Parmesan cheese. Cook until heated through.
  6. Ladle soup into bowls and garnish with fresh parsley and shredded mozzarella cheese.
  7. Serve immediately.

Notes

For an extra creamy soup, stir in a dollop of ricotta cheese just before serving.
