Zesty Lemon Rice Krispie Treats

Bright and tangy, these Zesty Lemon Rice Krispie Treats combine the classic marshmallow crispiness with refreshing lemon zest for a delightful twist on a beloved snack.

  • 6 cups Rice Krispies cereal
  • 3 tablespoons butter
  • 10 oz marshmallows (about 40 large marshmallows)
  • 1 tablespoon lemon zest
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. In a large saucepan, melt the butter over low heat.
  2. Add marshmallows and stir continuously until completely melted and smooth.
  3. Remove from heat and stir in lemon zest, lemon juice, vanilla extract, and a pinch of salt.
  4. Immediately add the Rice Krispies cereal and gently fold until evenly coated.
  5. Press the mixture into a greased 9×13-inch pan using a buttered spatula or wax paper.
  6. Allow to cool and set for at least 30 minutes before cutting into squares.

Notes

For an extra burst of flavor, sprinkle additional lemon zest on top before the mixture sets. Serve chilled for a refreshing treat.
