Delicious Zucchini Brownies

These fudgy zucchini brownies are a delicious and sneaky way to add vegetables to your dessert. Moist, chocolatey, and surprisingly healthy, they’re perfect for satisfying your sweet tooth.

  • 1 ½ cups all-purpose flour
  • ¾ cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup packed brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded zucchini, excess moisture squeezed out
  • ½ cup chocolate chips, optional

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, combine granulated sugar, brown sugar, oil, eggs, and vanilla extract. Mix well.
  4. Add the wet ingredients to the dry ingredients and mix until just combined.
  5. Stir in the shredded zucchini and chocolate chips (if using).
  6. Pour batter into the prepared pan and spread evenly.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs.
  8. Let cool completely before cutting into squares.

Notes

For extra fudgy brownies, use melted butter instead of oil. You can also add a cream cheese frosting for an even more decadent treat!
